What better way to start your day then with an energizing and protein packed breakfast. Not only will it keep you fuller longer, a well-balanced breakfast will set the tone for the rest of your day, by balancing your blood sugar and minimizing cravings later in the day. It also provides your brain with the much needed nutrients to stay focused, concentrate and be productive all morning. A 3/4 cup serving of quinoa provides about 8 g of protein, 40 g of carbohydrates and 5 g of fibre. Now that’s an impressive way to start your day!
- 1 cup quinoa
- 1-2 teaspoons cinnamon
- 1/4 cup ground flax seeds
- 2 eggs
- 2 cups almond milk
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- 1 frozen berries
- 1 apple peeled and thinly sliced
- additional toppings such as chopped nuts, coconut flakes, fresh fruit, maple syrup
Preheat oven to 350 degrees. Lightly grease an 8-by-8-inch square baking pan, and set aside.
In a medium bowl, stir together quinoa, ground flax and cinnamon, and place at the bottom of prepared pan Next, beat eggs until fully mixed. Whisk in the coconut sugar, almond milk and vanilla extract and continue to mix until well combined.
Next, scatter berries and sliced apple evenly on top of quinoa. Pour egg and milk mixture over top of fruit and quinoa. Lightly stir to partially submerge the fruit. (Milk mixture will cook quinoa to create a very soft texture on the inside while creating a lightly crunchy crust on the outside.)
Bake for 1 hour, or until casserole is mostly set with only a small amount of liquid left. Serve warm, with the toppings of your choice such as coconut, walnuts, fresh fruit and a drizzle of maple. Refrigerate leftovers for up to 4 days. * Recipe adapted from Katie at the Kitchen Door
