Here is an easy recipe I adapted from Chatelaine one day when I had some sad looking zucchinis I needed to use up. I hope you enjoy them as much as we did!
May is Celiac Awareness Month, so I thought I would post a few gluten-free baking tips and some of my favourite go to recipes that are gluten or grain free and kid approved!
The first time I tried making these granola cakes was during one of my summer cooking camps. I decided to make them into the shape of a cupcake rather than a bar, which certainly went over well with the campers. We also played around with the recipe and added brown rice cereal for added crunch, ground flax for some extra fibre and shredded coconut and chocolate chips for flavour.
